How To Make Cauliflower Rice Without A Food Processor

Confession time: When my roommate is out of town, I tend to eat like a teenage boy. Cooking healthy, balanced meals for one just doesn't seem worth my time. So when she left last weekend, my lazy brain said, "Go ahead, Kassie, have grilled cheese for dinner two nights in a row. That's totally fine."

By day three, I was aching for some vegetables. Enter: cauliflower rice. I'd wanted to try it for months, but I don't own a food processor, so I didn't bother. In my produce-deprived state, however, I found myself newly inspired—so I found a tutorial, and gave it a whirl. Here's what happened. 

I felt a little silly.

Like I said, I'd put off making my own cauliflower rice for months because the recipe I saw called for a food processor and I didn't have one. What's a budget-loving 20-something to do? Buy it at Trader Joe's. But every time I went, they seemed to be sold out, so I just didn't make it. When I actually looked up how to make it without electric appliances, however, I realized that the solution was so simple I should have thought of it on my own: A box grater.

I made a mess.

While you can also use a blender in lieu of a food processor, I actually don't have one of those either. So I went the box grater route—which is most definitely the messiest of the three. Be prepared for little bits of cauliflower to get all over your kitchen. Needless to say, I had to sweep. Do yourself a favor, and grate directly into an extra large bowl to contain the flying bits.

I broke a nail.

You know when you get to attempt to grate the last nub of cheese on a box grater and you fear that you'll grate your fingers too? That fear was present with every chunk of cauliflower. At one point, I scraped the top of my thumbnail right off—goodbye pristine manicure! My advice: Leave a good portion of the stem intact to serve as a handle. You only grate the florets, so once you hit the stem, you can toss the rest in the trash or compost (with your fully intact fingers).

I had an awesome dinner.

Although there were a few mishaps along the way, making the cauliflower rice was ridiculously simple. Just grate the florets, pat dry with a towel, and sauté with whatever spices you want. I used salt, pepper, and red pepper flakes. After experiencing the awesome fruits (err, veggies?) of my labor, I'd definitely put up with the mess again.
