Penne alla Tequila

We've pulled a Mexican twist on Penne alla Vodka by substituting fiery tequila in the rosy tomato-cream sauce -- but we couldn't bear to give up the traditional smoked salmon and sour cream.

12 oz. penne or ziti
2 tsp. unsalted butter
3/4 c. heavy or whipping cream
1 tbsp. tomato paste
1/4 lb. smoked salmon
3 tbsp. sour cream
3 tbsp. chives or scallion greens
- Bring large pot of salted water to a boil. Add penne and cook according to package directions until al dente.
- Meanwhile, in 10-inch nonreactive (i.e. not unlined aluminium or cast iron) skillet, melt butter over low heat. Add scallion whites and cook, stirring frequently, 3 minutes, or until tender. Remove pan from heat and add tequila. Return pan to heat, raise heat to high, and cook 1 minute. Add heavy cream and salt and boil 2 minutes, or until slightly thickened. Whisk in tomato paste until combined.
- Reduce heat to low. Add smoked salmon and cool sauce just until heated through.
- Drain penne and transfer to large bowl. Pour sauce over pasta, add sour cream and chives, and toss well to combine.
