Ingredients
1 tbsp. light butter or oil
shallots
mixed Texmati, white, brown, wild and red rice (such as Royal Blend)
can Chicken Broth
dried blueberries
1 tsp. fresh thyme
1/2 c. toasted slivered almonds
2 tbsp. Chopped parsley
Directions
  1. Heat butter in medium saucepan over medium heat. Cook shallots 2 minutes until softened. Add rice and chicken broth, bring to boil, cover, reduce heat and simmer 12 minutes.
  2. Stir in blueberries and thyme; cook 3 minutes more or until rice is tender. Remove from heat and let stand 5 minutes. Stir in almonds and parsley. Serve with pork.
